This 2021 inaugural vintage of Rippey Rosé is an homage to the French style of rosé made in Provence. The fruit was harvested at slightly lower brim specifically for making rosé. Once primary fermentation is complete, we inhibit malolactic fermentation to retain the natural acidity profile. A select portion of the remaining grapes were run through a flash détente system which utilizes heat and vacuum to bring even more of the grapes natural fruit flavors and aromas to the surface, while limiting the grassy flavors. To capture the classic Sauvignon Blanc character, a majority of the grapes were whole cluster pressed and fermented in stainless steel at a cool temperature. We combined two different winemaking techniques in making our Napa Valley Sauvignon Blanc. Enjoy with fresh shellfish dishes, salads with a citrus component, or any number of spicy dishes. The fruit for this wine is hand-picked from our family vineyard in the foothills of the Napa Valley. Medium bodied, with a nice balance of citrus fruits that lead into a clean, bright finish. This is a light, crisp wine with notes of citrus fruits. Our first Lodi Sauvignon Blanc uses 100% Sauvignon Blanc grapes from the vineyards of Neal Overboe, a Lodi AVA legend. The wine is very balanced on the palate with a near perfect blend of creaminess, acidity and ripe stone fruit. A very floral aroma wafts from the glass with notes of jasmine flower and honeysuckle. Two thirds of the wine was fermented in new French oak barrels, and the remainder in stainless steel tanks. ![]() The fruit for this 100% Carneros Chardonnay was hand picked and pressed whole cluster. Varietal: 100% Chardonnay Harvest: NV Alcohol: 13.1 Brix: Production: 122 Casesħ50ml bottle: 750ml bottle: $25.00 Retail | $20.00 The Vintners Club Chardonnay, 2021, Carneros The important thing to remember is that the secondary fermentation happens in the bottle in quality sparkling wines like Rippey Family Vineyards Brut. At the end of this process the cap is removed and replaced with the traditional cork with wire cage. The yeast acts on the sugar and the resulting carbon dioxide remains trapped in the bottle. The wine is then bottled and capped, with a bottle cap similiar to ones found on beer bottles. This secondary fermentation is accomplished by adding a mixture of sugar and yeast, called the liqueur de tirage, to still wine. ![]() This is a dry sparkling wine made with 100% Chardonnay grapes in the traditional méthode champenoise which requires a secondary fermentation in the bottle.
